House of Flavour - Flavour of the month - September 2024 Biscuit Sandwich

What’s your chosen filling?

The humble biscuit, whether enjoyed on its own or paired beautifully with a cup of tea or coffee, is a delightful snack that has stood the test of time. During the lockdown, British consumers spent an extra £19 million on biscuits, showcasing their enduring demand. Although biscuits were not always as moreish as they are now, they have a rich history in Britain. Biscuits first appeared in the 14th century, referred to as “bread baked twice,” and were enjoyed with both sweet and savoury accompaniments. It wasn’t until the 17th century, when sugar became more accessible, that cooking techniques evolved, heavily influenced by French and Italian cookbooks, shaping the biscuits we know today.

Whether you fancy a chocolate-dipped treat, a cream sandwich, or a wafer-thin delight, there is a biscuit for everyone. Recently, biscuit sandwiches have seen a resurgence in popularity. From Oreos to Jammie Dodgers to Bourbons, there are plenty of varieties to choose from. M&S has relaunched custard creams and Bourbons with extra cream for filling lovers, while chocolate lovers can indulge in biscuits coated in chocolate

Sainsbury’s has taken a different approach, introducing new flavours like peach custard creams and caramel Bourbons this summer, along with raspberry Jammie Dodgers. Let’s not forget the multitude of Oreo flavours available for trying.

New biscuit flavours are not the only innovation; the perfect inclusion of biscuits in various treats is also gaining popularity. Grenade protein bars have teamed up with Oreo to provide the perfect post-workout treats. For a breakfast pick-me-up, French toast topped with a spoonful of Oreo and coffee butter or paired with cream cheese on a bagel creates a delightful start to the day. For dessert, consider a piece of fudge incorporating Bourbons for added texture or a strawberry milkshake topped with classic Oreo crumbs. The dessert ideas don’t stop there, as the biscuit sandwich is scaled up three times its size, offering flavour combinations such as classic peanut butter and jam or the unusual coconut and lavender. Watch the market explode with these innovative creations.

Biscuits are a fantastic way to add an extra layer of depth with sweet, creamy, and toasted notes. We offer a variety of biscuit flavours, ranging from classic rich dark cocoa to light coconut. Whether you prefer filled biscuits or dunking options, we have the perfect flavour to enhance any treat.

Millionaire Shortbread

Inspired by the classic Neapolitan ice cream flavours, this millionaire shortbread begins with a strawberry-flavoured base, delivering sweet, fruity aromas. It is then topped with a layer of chocolate caramel flavoured with Oreo ‘type’, accentuating rich, chocolatey notes and balancing the sweetness of the final layer of vanilla-flavoured white chocolate. This delightful treat brings together the beloved trio of strawberries, chocolate, and vanilla in a delicious mash-up – just look at the ooze.

Biscuit Brownie

Why settle for a plain brownie when you can elevate it with added textures and flavours? We’ve topped our brownie with a crunchy biscuit and infused it with our ‘nice’ biscuit flavouring. This not only intensifies the sweet cream profile but also perfectly complements the chocolate notes by adding a delightful roasted nutty element, making each bite irresistible.
